I love to use my Le Creuset Signature Everyday Pan for this recipe. It’s wide and deep enough to mix the filling together.
Use red, yellow, orange or green bell peppers based on your preference!
Ground turkey can be substituted with ground chicken or beef.
This is a keto-friendly recipe! Eat plain or serve with cauliflower rice.

STUFFED PEPPERS:
¼ cup | White Onion (finely chopped)
2-3 | Garlic Cloves (finely chopped)
3 | Bell Peppers
2-3 tablespoons | Extra Virgin Olive Oil
1 teaspoon | Kosher Salt
¼ teaspoon | Fresh Cracked Black Pepper
1 pound | Ground Turkey (93% lean)
½ teaspoon | Cumin Seeds
¼ teaspoon | Chili Powder
¼ teaspoon | Ground Cayenne Pepper

½ cup | Cotija Cheese

Guacamole
Mise en place by finely chopping onion, garlic and jalapeño (keeping separate) and set aside. Cut bell peppers in ½ lengthwise, remove and discard seeds and set aside.
Preheat oven to 400° F and place rack in the center of the oven.
Add olive oil to large skillet or Dutch oven and set over medium-high heat. Add onion, 1 teaspoon salt and ¼ teaspoon pepper and cook stirring with a wooden spoon until cooked through and onion begins to lightly brown, about 4-7 minutes. Add garlic and jalapeños and continue to cook about 1-2 minutes, making sure not to burn the garlic.
Add ground turkey and spices and begin to break up turkey into chunks. Let brown a few minutes and begin to mix everything together while allowing turkey to brown and cook, about 7-10 minutes. Add the juice of 1 lime, mix, remove from heat and set aside.
Gather turkey filling, bell peppers, cotija cheese and baking dish.
Generously fill and evenly distribute turkey filling between the 6 bell peppers halves. Place in baking dish and either add slices or crumbles of cotija cheese on top. Fill baking dish with about ½-inch of water making sure the water does not seep into the stuffed bell peppers. Bake for 35-40 minutes until cheese is darkened and bubbly and bell peppers are tender.
Serve hot as is or with a side of guacamole!
