Helpful tips!
Use a cooking thermometer to monitor and maintain a temperature as close to 375° F as possible. You might need to take breaks in between batches to increase/decrease the temperature.
Fritters will look very dark but you want to ensure the batter is fully cooked through.
Double, triple or quadruple the recipe for more apple fritters.

DONUTS:
2 large | Honeycrisp Apples
1 ¼ cups | All-purpose Flour
¼ cup | Granulated Sugar
2 teaspoons | Baking Powder
½ teaspoon | Kosher Salt
2 teaspoons | Ground Cinnamon
2 large | Eggs
⅓ cup | Whole Milk
1 teaspoon | Vanilla Extract
4 cups | Canola or Vegetable Oil
GLAZE:
1 cup | Confectioners’ Sugar
1 tablespoon | Whole Milk
½ teaspoon | Vanilla Extract
¼ cup | Apple Cider
Wash and dry apples. Peel, core and cut apples into bit size pieces and add to medium mixing bowl. Set aside.
Combine flour, sugar, baking powder, salt and cinnamon in a large mixing bowl. Add eggs, milk and vanilla extract and mix to form a sticky batter. Using a rubber spatula, fold in apples until evenly combined.
Using a dutch oven or large pot and food thermometer, add enough oil until it is about 2-inches deep. Heat over medium-high heat until temperature reaches 375° F. Use about ¼ cup of batter per fritter and cook fritters in hot oil, 3 at a time for about 2 minutes per side. Remove with slotted spoon onto paper towels to drain and cool down.
Meanwhile, make glaze. Whisk together confectioners’ sugar, milk, vanilla extract and apple cider until there are no visible lumps. This can sit at room temperature.
Dunk warm fritters into glaze and let excess run off on a wire rack. The glaze should set and be ready to eat in about 5-10 minutes depending on the temperature of your home.
Best if eaten right away. Store leftovers in paper bag or airtight container at room temperature. If texture becomes soggy after a few hours, reheat in oven at 200° F for 5-8 minutes until crisp.
